There's two more days left until October and I am in full Halloween mode. I've been coming up with as many pumpkin spice recipes as possible without trying to over complicate things. I wanted something sweet but not overly sweet. I also love anything that is bite sized.
These little nuggets of heaven are the perfect in between meal snack, dessert or, with your #basic pumpkin spice latte. They are vegan, grain free, and if they're on my site, they're nourishing. All the ingredients were things I already had in my cupboard. I will list some swaps along with the ingredients.
1/4 cup chocolate protein powder of choice - I used Tropeaka boost protein
1/4 cup coconut flour - or use another 1/4 cup almond meal if you don't have
1/4 cup fine almond meal
3 tbsp almond milk
1 tbsp maca powder
1/4 cup coconut butter
1/4 cup almond butter
1 tbsp coconut oil
1 tbsp chocolate ghee - sub with one square of melted dark chocolate and regular ghee
dash of salt and vanilla
2 soft pitted dates
2 squares of dark chocolate chopped up
many dashes of pumpkin spice - I used Trader Joe's pumpkin pie spice - or use cinnamon and nutmeg if you don't have
Chop up the chocolate and set it aside. Blend everything in a food processor (other than the chocolate). It would look crumbly but should be able to stick to the side of the food processor easily when you press it. Add a little more almond milk if it's not sticking together. You can also add one more date, but that will increase the sugar in these a bit. Add in the chocolate and use a cookie scoop to form them into little balls. squeeze them firm! Store in the fridge in an airtight container!
Blend these little bites into some banana nice-cream for a cookie dough ice cream. You're welcome and enjoy all that is #basicpumpkineverything
